WISE VENISON LASAGNA

1 lb. ground venison
•
2½ cups mild enchilada sauce
•
½ teaspoon chili powder
•
1 tablespoon olive oil
•
½ cup finely chopped onion
•
1¼ cups minced zucchini
•
WISE round tortilla chips
•
1 lb. ricotta cheese
•
8 oz. shredded cheddar cheese
Brown venison in skillet. Add enchilada sauce and chili powder. Simmer, covered 5 minutes stirring occasionally. Sauté vegetables in oil until tender. Cool slightly. Combine the ricotta cheese with vegetables. Arrange 2/3 chips in bottom of pan. Sprinkle cheddar cheese over ricotta cheese mixture. Spoon on remaining venison mixture. Arrange remaining chips on top. Sprinkle with remaining cheddar cheese. Cover loosely and bake at 400 degrees for 1 hour. Uncover and bake 15 minutes. Let stand 5 minutes before serving.
