Game & Fish Dish
VENISON MAURICE

¼ cups sherry
5 pounds venison roast
1 pound carrots (2 inch lengths)
1 pound quartered onions
1 pound quartered potatoes
1 pound bacon
8-10 ounces Cajun Injector Marinade (Creole Garlic
         recipe)

Inject roast with the marinade and place in a 2 inch deep pan. Arrange bacon on top of roast. Place cut vegetables around roast. Pour sherry over roast and veggies. Cover and cook at 350 degrees for 90 minutes (time may vary depending on oven). To brown, remove cover 30 minutes before roast is done.
