Game & Fish Dish
TEXAS WILD BOAR STEW

2 pounds Wild Boar meat cut into 2-inch cubes
1½  cups flour
1 pepper to taste
4 tablespoons bacon drippings
1 large onion cut up
4 small onions, whole
2 cloves garlic, minced
4 carrots, halved
4 potatoes, halved
4 cups water
1 tablespoon parsley flakes
¼ teaspoon rosemary

Make a mixture of flour, salt and pepper. Coat Wild Boar meat with flour mixture. Brown meat in bacon drippings in a Dutch oven or large frying pan, then add cup-up onions and garlic. Cook for five minutes. Add rosemary and parsley flakes, cover and cook for one to two hours until boar meat is tender. Add potatoes, carrots and small whole onions. Cook 30 additional minutes. As an option, you can let this cook in a crock-pot for several hours.
