STRIPED BASS BAKED ON THE GRILL

1 (3-5 pound) Striped Bass or 4 Bass fillets
•
2 ripe tomatoes, peeled and sliced thin
•
1 large Vidalia onion sliced thin
•
3 tablespoons chopped parsley
•
1 tablespoon chopped fresh dill
•
1 cup dry red wine
•
butter, salt, and pepper
•
oil or vegetable spray
Oil fish inside and out. Place the onion, tomatoes, parsley, and dill on top of the Bass. Salt and pepper to taste. If you are using a whole Bass, just stuff the ingredients into the cavity. Place fish in a baking dish that you can use on the grill. Dot with lots of butter. Cover with foil. Bake on the Broilmster Grill at 400 degrees for 6 minutes. Add wine. Continue to bake 6 minutes per pound. Baste often during cooking. Remove Bass to warm plate and pour the wine from the pan over it.
