Game & Fish Dish
STEAMED CATFISH

2 lbs. Catfish fillets Soy sauce to taste
1 cup green onions sliced
1 cup very hot peanut oil
lemon or lime juice

Place Catfish on a rack above boiling water and steam 2-3 minutes on each side until fish turns white. Place fish in a heatproof glass dish; sprinkle with soy sauce and onion. Pour hot oil over fish. Sprinkle with lemon or lime juice if desired. Serve immediately.
