Game & Fish Dish
SPICY CATFISH

2 tbs. olive oil
2 tbs. pepper
¼  cup lime juice
½  cup chopped fresh cilantro
1 cup white wine
½  tsp. salt
2 tbs. dry mustard
4 Catfish fillets
2 tbs. chili powder

Preheat grill. Mix olive oil, lime juice, wine, mustard, chili powder, cilantro and salt in medium bowl. Transfer half of marinade mixture to another bowl, reserve for basting. Add Catfish to first bowl and marinate for 15 to 20 minutes. Drain fillets, discard marinade. Place fillets on oiled grill or use a grill basket. Grill and baste with reserved marinade, for about 4 minutes on each side, or until fish flakes easily with a fork.
