SEARED TUNA WITH A HORSERADISH CREAM

6 Tuna steaks
•
2 cups black pepper corns
•
1 red onion sliced paper-thin
•
1 16 ounce jar Cajun Injector Creole Garlic Marinade
Ingredients for Horseradish Cream
•
1 cup sour cream
•
¼ cup horseradish
•
1 tablespoon salt
Combine all ingredients for horseradish cream. Set aside and refrigerate. Heat a black iron skillet until very hot. Roll Tuna in Creole Garlic Marinade and then black pepper coating thoroughly. Place Tuna in hot skillet and cook on each side for 20 seconds and refrigerate. Slice Tuna and top with horseradish cream and red onions.
