REDFISH PARMESAN

½ cup milk

1 egg, beaten
•
1 cup buttery cracker crumbs
•
½ cup grated Parmesan cheese
•
2 lbs. Redfish fillets
In medium mixing bowl, combine milk and egg. In shallow dish, combine crumbs and Parmesan cheese. Dip fillets in milk mixture and then dredge in crumb mixture to coat. Heat ½ inch oil in skillet over medium heat. Add fillets; fry for 4 to 6 minutes, or until golden brown, turning over once. Drain on paper towels.
