RAINBOW TROUT LOUISIANNE

2 cups all purpose flour

2 cups buttermilk
•
1 cup oil
•
8-10 ounces jumbo lump Crab
•
1½ tablespoons lemon juice
•
4 ounces garlic butter
•
3 tablespoons green onion
•
Cajun Shake
Fish - Mix ¼ cup Cajun Shake with flour. Mix 3 tablespoons Cajun Shake with buttermilk. Dip fillets in buttermilk mix then in flour mixture. Next coat in oil and carefully set on hot oiled skillet. Sauté till golden brown on both sides.
Crabmeat – Melt garlic butter, add lemon juice, green onions and Crabmeat. Gently sauté Crabmeat so it stays whole until heated through. Spoon on top of fish and season to taste with Cajun Shake.
