Game & Fish Dish


PEPPERED CATFISH

½  cup vegetable oil
½  cup lemon juice
2 tbs. Worcestershire sauce
3 tbs. hot pepper sauce
2 tsp. salt
2 tsp. white pepper
2 tsp. Old Bay Seasoning
2 lbs. Catfish (or any other mild flavored fish) cut into
         serving pieces.
dash of paprika

Combine the first 7 ingredients in a bowl. Place fish on a well-greased fish basket about 4 inches above the coals. Baste with the sauce and sprinkle with paprika. Cook for about 6 minutes, then turn baste and season again and cook for another 7 to 10 minutes until fish flakes easily with a fork. Adjust the above seasonings to your taste if necessary
