PECAN FRIED GROUPER

6 Grouper fillets
•
½ cup Laura Lynn corn meal
•
3 tablespoons flour
•
1/3 cup finely chopped pecans
•
½ teaspoon cayenne pepper
•
dash of salt
Fill a large skillet with enough oil to shallow fry the fillets; begin to heat. Combine all dry ingredients in a small bowl. Coat fillets thoroughly with dry mixture. Place fillets in hot oil and fry until golden, turning frequently. When fillets are done, drain on paper towels.
Lime Cilantro Mayonnaise

1½ cups mayonnaise
•
½ cup finely chopped cilantro
•
juice and zest of 2 fresh limes
Mix all ingredients well. Keep covered in refrigerator until ready to use.
