NANCY'S FISH IN FOIL

fillets of your favorite fish
•
olive oil
•
thinly sliced red bell peppers
•
thinly sliced onion
•
whole fresh bay leaves
•
lemon juice (optional)
Place fillets on foil pieces, which are sized, large enough to "tent" and seal tightly over fish. Brush lightly with olive oil, salt and pepper to taste. Place whole bay leaves diagonally on top of fish in single layer (cover fish as much as possible). Place slices of bell pepper on top of bay leaves (single layer). Place slices of onion on top of pepper slices. Sprinkle on some lemon juice if desired. Pull foil closed leaving an air space above the fish packet and seal tightly. Place in oven at 350 or on grill and cool until fish is tender.
