LOUISIANA SALMON

2 Salmon steaks 1 - 2 inches thick
•
¼ cup olive oil
•
1 medium onion, chopped
•
2 garlic cloves, chopped
•
¼ cup fresh basil, chopped
•
1 cup chopped tomatoes
Sauté Salmon steaks in olive oil for 2 minutes. Remove from pan and place on a platter. Sauté onion and garlic in the olive oil until tender. Add chopped tomatoes and basil until heated through, and then return Salmon to the pan for approximately 12 to 14 minutes, until fish flakes with a fork. Salt and pepper to taste. Serve over pasta noodles or rice.
