Game & Fish Dish
HOT AND SPICY VENISON CHILI

1 lb. ground pork
•
4 lb. venison steak, cubed
•
1 tbsp. olive oil
•
4 oz. Cajun Injector Cajun Hot n Spicy Marinade
•
1 ½ onion, chopped
•
3 to 4 cloves chopped garlic
•
4 tbsp. Mexene Chili Powder
•
1 tbsp. oregano
•
1 tsp. salt
•
1 tsp. black pepper
•
1 tsp. cayenne pepper
•
1 12 –oz can crushed tomatoes
•
2 to 3 cups water (ad more if needed)
•
1 large beef bouillon cube (or tsp. instant)
•
1 to 2 jalapeno peppers
Brown ground pork and venison steaks in olive oil. Add onions and simmer until translucent. Add garlic and simmer for 5 minutes. Add all dry ingredients and blend well. Add water, tomatoes and jalapenos. Simmer over low heat for 1 to 1½ hours.
