HAMMERED VENISON

cut lean Deer meat from hindquarter or back strap.

salt and pepper to taste
Beat the meat with a meat hammer and cut into serving size strips. Make egg wash with one egg to 2 tablespoons of Parmesan cheese. Add soy sauce for color if desired. (For 2lbs. of meat, use 8 tablespoons of Parmesan cheese and 4 eggs.) Place meat in egg wash and then roll it in cracker meal. Deep fry until golden brown. Special thanks to Jack Ard for this recipe.
