GRILLED GARLIC WILD BOAR KABOBS

12 red pearl onions, peeled
3 (10 ounce) Wild Boar steaks, 2 inch thick
¾ cup Cajun Injector Marinade, Roasted Garlic Recipe
12 medium whole fresh mushrooms
1½ medium yellow summer squash cut into 1½ inch            pieces
12 large garlic cloves
Cajun Injector Cajun Shake seasoning

Preheat grill to medium high (300 to 350 degrees). Bring 3 cups salted water to a boil in a saucepan. Add red pearl onions and cook 2 minutes. Drain well and rinse with cold water to stop cooking. Wrap each Wild Boar steak in plastic wrap. Inject with marinade. Remove plastic wrap.

Cut each Boar steak into 2 inch pieces.Apply oil to skewers. Thread Wild Boar, onion, mushrooms, zucchini, squash, and garlic onto skewers. Sprinkle lightly with Cajun Shake seasoning.

Clean grill rack with wire grill brush. Grill kabobs covered with grill lid for 6 minutes on each side or until Wild Boar steak has reached the desired temperature. Baste with remaining marinade during grilling.
