Game & Fish Dish
GREEN CHILIS AND CHEESE CORNBREAD

1 cup cornbread
1 cup milk
½ cup oil
2 eggs, slightly beaten
1 4-oz. can Casa Fiesta Diced Green Chilies
I can cream style corn
1 large onion, grated or finely chopped
2 cups grated Cheddar or Monterrey-Jack cheese
1 tsp. baking powder
½ tsp. salt

Mix cornmeal with milk, oil, corn, baking powder, eggs and salt.  Pour half of the mixture into a greased baking dish or cast iron skillet.  Sprinkle onion, cheese and peppers over mixture (careful to avoid the edges), Pour remaining cornmeal mixture on top.  Bake in preheated 350 degree oven for 1 hour.
