GRANDMA GLAZE'S GRILLED SQUIRREL
•
2 Squirrels skinned and cleaned
•
1/3 grated sweet onion
•
1 clove garlic, crushed
•
1/3 cup orange juice
•
2 teaspoons lemon juice
•
2 tablespoons cooking oil
•
2 tablespoons dry white wine
•
3 green bell peppers, cleaned and chopped coarsely
Split Squirrels lengthwise along spine, wipe dry. Combine remaining ingredients in a shallow dish and marinate the Squirrel halves overnight. Turn pieces a few times while marinating.
Drain the Squirrel halves from the marinade and cook 25 to 30 minutes over medium-bright coals on a grill. Start cooking bone-side down, turn at midpoint. Baste often with the marinade mixture. In a kitchen range, broil 15 to 20 minutes, starting with the bone side toward the heat source.
Turn half way through cooking. Baste often with the marinade.
Serves 4 or 1 hungry hunter. Enjoy!
