GLAZED SALMON SURPRISE

4 (6-ounce) Salmon filets (1 inch thick)
¼  cup soy sauce
2 tablespoons lime juice
1 tablespoon honey
2 teaspoons grated lime rind
2 cloves garlic, minced
3 medium peaches, peeled and diced
1 small jalapeno pepper, seeded and minced
2 tablespoons minced fresh cilantro
1 teaspoon lime juice

Place Salmon in a shallow dish. Combine soy sauce and next 4 ingredients; pour over Salmon, turning to coat. Cover with plastic wrap and refrigerate 30 minutes, turning Salmon once. Combine peaches, jalapeno if desired, cilantro and 1 teaspoon lime juice; cover and set aside. Remove fish from marinade, discarding marinade. Coat a grill rack with vegetable cooking spray. Grill on the Broilmaster over medium-high heat (350-400) for 5 minutes on each side or until just cooked through. Top with peach and cilantro mixture if desired. Yield: 4 servings.
