FRENCH ONION PANEED TROUT
WITH SAUTEED LUMP CRABMEAT

3 lbs. fresh Trout fillets
•
2 tbsp. oil
•
1 (16 oz.) jar Cajun Injector French Onion Grill Recipe
Marinade
•
½ cup flour
•
Cajun Shake to taste
•
2 tbsp. butter
•
1 lb. lump Crabmeat
•
1 to 2 cloves garlic, minced
•
1/3 cup green onions, chopped
Pour flour into a bowl and season with Cajun Shake. Set aside. Pour into a bowl. Dredge Fish fillets in marinade, then in seasoned flour. Heat oil in a heavy frying pan. Cook fillets over medium heat for 2 to 3 minutes on each side. When fillets are cooked, remove from pan and drain on paper towels.
Melt butter in a saucepan. Add Crabmeat and heat through. Add garlic and green onions and mix well. Top Trout fillets with Crab mixture and serve immediately.
