FRAN'S VENISON SAUSAGE CHEESE BISCUITS

1 lb. browned, drained and cooled venison sausage

3 cups self-rising flour
•
1/2 cup Crisco
•
3/4 to 1 cup buttermilk
•
8 ozs. shredded cheese

Heat oven to 450 degrees. In large mixing bowl, combine flour and shortening. Cut shortening into flour until mixture resembles coarse crumbs. Start with 3/4 cup of buttermilk and mix until flour mixture is well mixed, adding more buttermilk as needed. Add the cheese and sausage to dough and roll into a ball, using more flour to keep from sticking to hands. Roll biscuits into a small ball and press onto a baking sheet. Bake until golden brown.
