ELK MEATLOAF

1 ½ lbs ground Elk
2 tbsp. Cajun Injector Creole Garlic Recipe Marinade
2 eggs
1 can (8 oz) tomato sauce
1 medium onion, finely chopped
1 cup dry bread crumbs
1 ½ tsp. salt
1/8 tsp. pepper
3 tbsp. brown sugar
3 tbsp. Dijon Mustard
3 tbsp. apple cider vinegar

In a large bowl, lightly beat eggs then ad marinade, tomato sauce, onion, crumbs, salt and pepper. Add ground Elk meat and mix well. Press into ungreased loaf pan. Combine brown sugar, mustard and vinegar and pour over the top of meatloaf. Bake uncovered at 350
