Game & Fish Dish
CREOLE GARLIC ELK BURGER MELT

1 pound ground Elk
¼ teaspoon dried oregano
2 onions, sliced
8 slices French bread
¼ teaspoons dried thyme
1 tablespoon mustard
1 clove garlic, minced
4 slices Swiss cheese
2 tablespoons cooking oil
2 ounces Cajun Injector Creole Garlic Recipe                      Marinade
salt and pepper to taste

Mix ground Elk, thyme, oregano, mustard, garlic, salt, pepper and marinade together well.  Shape into 4 patties and grill until done, 10-15 minutes.  Top with cheese.  In skillet, cook onions in oil, seasoning with salt and pepper until tender.  Toast bread on grill for a few minute; may brush with melted butter first if desired.  Place patties on French bread and top with onions. Serves 4.
