Game & Fish Dish
CREAM OF MUSHROOM
SMOKED CATFISH

1 lb. Crawfish or Shrimp, peeled
1 12–oz. can of cream of mushroom soup
1 bunch green onions, sliced
1 tbsp. minced garlic
Cajun Shake Seasoning, to taste
6 to 8  6 oz. Catfish fillets

Prepare smoked. Smoke wood chips in water. Place Crawfish in food processor. Process until finely chopped.  Place Crawfish in a small saucepan. Add soup, green onions, garlic, and Cajun Shake to taste. Cook over medium heat for 4 minutes, stirring occasionally. Place 1 spoonful of soup mixture on top of one Catfish fillet. Top with a second fillet.  Repeat with remaining Fish fillets and soup mixture.  Place Fish on rack in smoker. Smoke for 1 hour or until Fish flakes easily.
