COUNTRY QUAIL

4-8 Quail cleaned and dressed
•
4-8 slices of country ham
•
2 cups of white wine
•
I can cream of mushroom soup
•
½ stick butter plus 3 tbs. ¼ cup flour
•
salt and pepper to taste
Simmer Quail in white wine and ½ stick butter until almost done. Reserve drippings for gravy. Line the bottom of a deep pan or casserole dish with ham and place Quail on top of ham. Make gravy with ¼ cup flour, 3 tbs. butter and the wine drippings. Be sure to have enough gravy to cover the Quail. If you need additional liquid for the gravy, use canned Chicken broth. Cover the Quail with gravy and cover tightly. Bake at 350 degrees for 45 minutes or until done.
