COSTA DEL MAR SALMON SCAMPI

2-3 cups skinless, boneless Salmon, cut into 1-1/2-2
inch pieces
Sauce ingredients:
•
¼ cup extra virgin olive oil
•
1½ teaspoons minced garlic
•
¼ white wine
•
½ teaspoon sweet basil
•
1 tablespoon lemon juice
•
1/8 teaspoon dried red pepper flakes
•
¼ teaspoon oregano
•
2 teaspoons chopped fresh parsley
•
fresh ground pepper
•
1 tablespoon butter
•
½ teaspoon salt
Preheat oven to 450 degrees. In a small saucepan, bring olive oil to medium heat. Add minced garlic and saute until almost golden. Add wine and remaining spices. Simmer and reduce for approximately 10 minutes. Remove pan from heat and add butter and lemon juice; stir until butter melts. Dip each Salmon piece into the sauce to coat on all sides. Place in a single layer in shallow buttered glass or enamel-coated cast iron casserole dish. Salmon pieces should be touching but no overlapping. Cover Salmon with remaining sauce. Bake at 450 degrees for 10 minutes.
