Game & Fish Dish
CATFISH PARMESAN

1 cup fine, dry breadcrumbs
•
1/3 cup grated Parmesan cheese
•
1 teaspoon salt
•
1/2 teaspoon pepper
•
1/2 teaspoon paprika
•
2 tablespoons chopped fresh parsley
•
1/2 teaspoon chopped fresh oregano
•
5 8 ounce Catfish filets
•
1/2 cup butter, melted
Stir together first 5 ingredients and, if desired, parsley and oregano. Dip Catfish in butter; dredge in breadcrumb mixture. Place on parchment paper-lined baking sheet. Bake at 375 degrees for 25 minutes or until fish flakes easily with a fork.
