Game & Fish Dish
CATFISH PARMESAN

1 cup fine, dry breadcrumbs
1 cup fine, dry breadcrumbs•1/3 cup grated Parmesan cheese
1/3 cup grated Parmesan cheese•1 teaspoon salt
1 teaspoon salt•1/2 teaspoon pepper
1/2 teaspoon pepper•1/2 teaspoon paprika
1/2 teaspoon paprika•2 tablespoons chopped fresh parsley
2 tablespoons chopped fresh parsley•1/2 teaspoon chopped fresh oregano
1/2 teaspoon chopped fresh oregano•5 8 ounce Catfish filets
5 8 ounce Catfish filets•1/2 cup butter, melted
1/2 cup butter, meltedStir together first 5 ingredients and, if desired, parsley and oregano. Dip Catfish in butter; dredge in breadcrumb mixture. Place on parchment paper-lined baking sheet. Bake at 375 degrees for 25 minutes or until fish flakes easily with a fork.
