CAJUN SMOKED SNAPPER

2 8-10 ounce Snapper fillets-skin on
Cajun Injector Marinade, Creole Butter Recipe
Cajun Injector Cajun Shake seasoning
Cajun Injector Stove-Top Smoker with Hickory
         Smoking Chips

Prepare smoker-using instructions provided. Wrap Snapper fillets in plastic wrap. Inject with marinade using 1 1/2 - 2 ounces of marinade per pound of meat. Remove plastic wrap. Sprinkle lightly with Cajun seasoning. Place fish on smoker rack, skin side down. Smoke for 20 minutes over medium heat. Serves 4.
