CAJUN INJECTOR DEEP FRIED TURKEY

Cajun Injector Marinade

Cajun Shake salt & pepper

3-4 gallons oil (preferably peanut oil)

Remove giblets from Turkey, rinse with warm water, pat dry (especially inside cavity) and leave whole. Pour 8 ounces of marinade into a measuring cup. Inject 4 oz. of Cajun Injector Marinade on each side of breast. Inject approximately 2 oz. in each leg and thigh. Use about 16 oz of marinade per turkey. Rub seasoning on outside of turkey and on the inside of cavity. Hold the turkey by the legs and lower (breast first) slowly into the oil. Deep fry in 3-4 gallons of oil at 325 degrees for 3 minutes per pound or bake in conventional manner.
