CAJUN CATFISH

Catfish filets (3-4 oz. ea.)
1 stick butter 1 whole
fresh lemon fresh parsley
chopped Cajun seasoning

Coat the bottom of an oven proof pan with butter. Place Catfish filets in pan, pour melted butter over fish. Sprinkle each filet with Cajun seasoning and chopped parsley. Bake in a 400 degree oven until the fish is done, about 20 minutes. When you remove the fish from the oven, sprinkle it liberally with lemon juice. Serve immediately.
