Game & Fish Dish
BROILED RAINBOW TROUT

1 egg white
seasoned bread crumbs (fine)
non-stick cooking spray
1 tablespoon Bertolli olive oil
Rainbow Trout fillets
fresh lemon juice or REALEMON juice

Preheat broiler. Dip Trout fillets in egg white and then coat with seasoned bread crumbs. Spray pan with cooking spray and add olive oil. Once oil is hot turn heat down to moderate temperature and add fillets and saute on each side until crumbs are brown (approx. 5-6 minutes). Resist the urge to turn over the fillets prematurely or the coating will come off! Transfer fillets to a broiler pan and broil for 5-8 minutes or until slightly brown and the fish flakes easily. Transfer to a dinner plate, add a squeeze of lemon and enjoy with Uncle Ben’s Broccoli Rice Au Gratin and PictSweet frozen broccoli spears or fresh steamed broccoli.
