BOUDIN STUFFED PORK TENDERLOIN

1 pork tenderloin
2 links Boudin smoked sausage (or fresh smoked                sausage in it's casing)
Cajun Shake
butcher's twine

Preheat grill. Butterfly the tenderloin and season both sides with Cajun Shake. Cut the sausage out of casing. Place sausage in center of loin. Fold up sides and lace with butcher's twine. Grill pork loin on all sides until internal temperature reaches 135 degrees F.
