BOBBY'S GRILLED MARINATED
DUCK BREASTS

6-8 Duck breasts, boned and skinned
1 1/2 cups commercial Italian salad dressing
3 tablespoons Worcestershire sauce
3/4 teaspoons garlic powder
3/4 teaspoons ground cloves
Juice of 3 lemons
slices of bacon

Soak Duck breasts in salt water for about 3 hours. Wipe with paper towels and place in a shallow pan. Combine 5 ingredients for marinate; pour mixture over Duck breasts. Place in refrigerator, and marinate at least 3 hours or overnight. Remove Duck breasts from marinade and wrap each in a bacon slice; secure with toothpick. Grill on the Broilmaster over slow coals for 7-8 minutes on each side or until bacon is done. Slice Duck breasts thin, and serve as hors d’oeuvre with BBQ sauce; or serve whole as entree with black currant sauce. (Be sure to remove all steel shot.) Good with wild rice and other veggies.
