BLAZE ORANGE QUAIL

6 slices bacon
•
6 Quail, dressed
•
Salt and pepper
•
½ lb. mushroom caps
•
1 bunch green onion, chopped
•
3 tbsp. melted butter
•
2 tbsp. prepared mustard
•
½ tsp. dry ginger
•
1 cup orange marmalade
Wrap a slice of bacon around each Quail; arrange in rows on a large sheet of heavy-aluminum foil. Season with salt and pepper. Sauté mushroom caps and green onions in butter. Pour all over quails; seal with a double wrap. Bake at 325 degrees for 1 hour. Combine remaining ingredients; serve with Quail.
